It's been a while since I have posted, what with moving and getting settled, etc. But I'm back to smoking and posting. Today is deer sausage day! Sorry, I didn't get pics of the making, put I remembered to get pics of the smoking!

Correct this if I am wrong ... jfleming

seasoning for 6 pounds of meat
grind twice through the 3/8" coarse plate



2tbsp salt
1.5 tbsp sage
1.5 tsp thyme
.5 tsp ginger
.75 tsp nutmeg
.5 tsp white pepper
.25 tsp cayenne pepper
.5 tbsp crushed red pepper
.75 cups ice water.
Cure #1 at the USDA recommendation of 1 tsp per five pounds

Folks, I'm not sure what's happening with the pics. They are showing appropriately on my end. I can see them just fine.
