The Best Egg Salad - Enabler Version

I have been making lots of egg salad for some reason, mainly because I like it. I have been trying many versions and this is the best version for me.

It is a PITA to make. Not so much making it but the cleanup afterward. It relies on a few tools I have bought thru the enablers here and from elsewhere.

First hard boil about a dozen eggs. I ate two here as well as my wife so I will start with 8.

Let the eggs cool for 20 minutes after boiling them and peeling will be way easier.

Now we are ready to start.

Use a potato ricer to make the eggs very fine into a consistency that you could never do by slicing.

Believe me, once you do this you will never go back to using a fork.

next we will chop pickles and white onions. I prefer Famous Dave's spicy garlic slices.

Use this food chopper to chop. I was enabled here to buy this.

I will say this is definitely worth buying. I love it.

OK, now it is time to mix it up.

8 hard boiled eggs
1/4 cup chopped pickles
1/4 cup chopped white onion
1/2 cup mayonnaise
2 Tbsp yellow mustard
1 Tbsp smoked paprika
Fresh cracked pepper to taste

It might look funky but it tastes so good.

This will make many egg salad sandwiches. This will not disappoint.
 
I love potato salad and yours looks excellent

I believe it's EGG salad...

Want to step it up another notch ?? After peeling the eggs slice them in half (think deviled eggs here)... Now cold smoke them for a few hours... By slicing in half the yolks get some smoke too... Now carry on with the recipe as you have it...
 
So I am the weird one, I love eggs in pretty much in every way except egg salad. Sorry, nope. I think texture maybe. Here in Ohio we make bologna and ham salad. Slam chopper is a must for me too. Soup machine.
I love eggs in every shape and form... think it's the texture of egg salad as well! Maybe add croutons just before hand lol?

Yet again something only I will eat. Oh well, More for me. I think I've always had it with a bit of celery seed in it as well. The smoking and horse radish suggestions sound over the top to me, just my style !! Gotta try it.

I have had a few sandwiches so far. I just made a mini one as a snack. You still get texture from the pickles and onions but the smoothness of the eggs is great.

The chopper works great for many things like Pico De Gallo or Shariza salad. I just bought a cheap mini version for my wife (right after seeing it on a YouTube video), mainly for slicing or shredding garlic.

That looks F'n Kill'er Chris.

I like a touch of horseradish as well as a tablespoon of "capers, because I freak'in love them" in my E.S. and for me it has to be Duke's Mayo.
I never thought of using the ricer, but will next time I make some up, the ricer looks like it would work great for deviled egg filling as well.
Now I just have to figure out how to use the Insta pot to get the barely hard boiled yolks that I like so much.

I will be making some up soon, thanks for the great idea's.

Chris, have you ever thrown a couple pieces of bacon on your E.S. sandwich?
If not you have to try it, the kill'er look'in sandwich in your photo is scream'in BACON, can you hear it?

Haha, I have that little garlic slicer, grater as well, I wish the slicer, sliced the garlic, so you can damn near see through it thin, which is "grate" for melting into sauces and olive oil.
