I did it and it came out great . Barely enough left for my work lunch tomorrow . Thanks for the tutorial . Helped me big time do this 6# flat with confidence for cookout today .

Thanks for the likes guys. Very good advice from Al . Did it on my Pit Boss . Did a few beef short ribs above the brisket on upper rack , the first one finished earlier and didn't last until the rest got pulled off for a pic lol

How long was it in the smoker for?

Thank you, It took about 7 1/2 hours set at 225 to get to 203 IT..... It was very hot in North East Ohio yesterday, so my rig seemed to be running in mid 230's - 240's a lot of the time though. I just let it push through and not mess with Temps or anything.

I've got a smaller flat I plan on doing just like this. Looks great!

Did you foil over the pan when it hit the stall or just let it ride?

I just let it ride, I contemplated foiling it around 180 because it seemed to stall there, but that wasn't mentioned in Al's instruction ( foiling ) so i just rode it out.
