First off, Howdy from Texas.
Last week I made my first batch of Beef Jerky (4 lbs) and it was a success AND failure. I loved the marinade(24 hour soak) and the flavor, exactly what I was looking for, but it was WAY too salty. The reason I think is a combination of too much Soy sauce and me sprinkling Tex-Joy mesquite shake(first ingredient salt) right before I put on smoker. So I have came up with a couple ideas, wanted to ask people that do this often.
1. I called Tex-Joy and they don't make a salt free version of that product(and I love it's taste) , and I can't find a copy cat version on the net. Has anyone tried it, or know of a similar seasoning? I also ordered a salt free mesquite seasoning from Spice Hunter and not similar at all......
2. If I can't find a salt free copy cat, if I used a low sodium Soy and Worcestershire sauce, does anyone think that would make up the difference of the salt from the sprinkle seasoning. That seasoning is excellent IMO.
