Having a go at the Cabela's teriyaki snack stick kit.

For some reason the mixed pic and stuffed pic didn't come out. Put in smoker for 1 hour at 100 degrees. Now going for 5 hours at 125 degrees. Then bump to 170 to get 156 IT.

How do you like that grinder? Kind of in the market for a new one...

The grinder has a 3/4hp motor and does a good job. I've used it about a dozen times with no issues. For an occasional user such as myself it should give me plenty of life. This unit does have plastic gears. So you need to be careful with too frozen meat or bones. It is meant to shutdown in the event of a jam. And it has reverse. But, I've not had either a jam or the need to reverse it. It grinds meat just fine and includes 3 plates. It also can be a stuffer. Though I've not used that. I have a vertical stuffer. It comes with a couple tubes and plate for stuffing. The grinder attachment breaks down for easy cleaning.I am happy with it and recommend it for the weekend warrior that is looking to do 10 or so pounds of meat for home use. I wouldn't recommend this to a hard core hunter or someone that is going to do large amounts at a sitting.

And here they are. I'm hoping these look, taste, and have the same texture after they sit. My last batch of peppered snack sticks were fine when they were done. But after letting them bloom overnight they got a mushy texture that I didn't like. And threw them away. Which is why I did a small batch with this. The initial taste of these is good. A tad strong in the teriyaki flavor. But I'm thinking that will mellow after they sit overnight.

And I'm happy to report that the piece I tried this morning was great. The flavor mellowed slightly. And it is still firm with a decent snap to the casing.
