Ok so the reccomended cooking temp is suggested to be 200-225. I can't get it to go that low, the lowest is around 300. Pretty sure I'm not overcooking, did 2 plump chickens and they still weren't anywhere near being done at 5 hours, ended up finishing them off in the oven for a half hour. Anybody out there that can comment on the thermometer
 
What kind (brand name please) of smoker do you have?

Most factory thermometers are notorious for being inaccurate. A whole chicken should not have taken over 5 hours so I would think that your therm is reading way higher than what your temps actually are. In order to produce good AND safe food we really need to know accurate temps so a good accurate therm is a must.

Yes you need to replace your temperature gauge asap, you can't cook properly if you don't know what the temp actually is.    I would also say to get a oven thermometer so you can see what your temps are at the food level.
