Hey guys, new to the forum and new to smoking! I've only smoked chicken wings and thighs in the past. Did a little 2 pound pork shoulder today and used a new digital dual temp probe my girlfriend got me for Christmas. It's a Thermpro. The probe in the meat was pretty accurate compared to my instant read thermapen, but I'm curious if there is a specific spot in my electric Smoke hollow smoker to put the probe to monitor smoker temp? I clipped it on the top middle rack above the wood chips, and put the pork on the top rack. The probe that is built in the door was reading 210-220 the whole time, while the digital probe I put in there was reading ~260F. Because of this, I'm not really show what temp I smoked at and just monitored the internal temp and pulled it out to rest when it hit just under 190F. I had it smoking for 4 hours, so I'm wanting to assume the 210-220 reading was more accurate. Any thoughts? Thanks!

Set the temp probe near but not touching the meat. I usually clip it on the same rack next to the meat. Test the probes accurate in boiling water and go by their reading for the cook...JJ
