Just a ? on prppane smokers- is it possible to hold a temp. of 100-120 degrees in these.

Yeah, set it out in the bright texas sun and don't light the fire :)

Seriously though, these (GOSM) smokers aren't designed to go that low. I'm not sure what model you have, but it's probably more designed for 200+ temps. I take it you're wanting to smoke cheese or maybe make jerky or some other low temp smoking. The easiest way to do that is make a small modified fire box, external to the smoking chamber. I've seen people take a side firebox and attach a dryer exhaust hose to it, run it to the smoking chamber and run it that way.

Depends on the smoker. My Camp Chef Smoke Vault can hold a temp in the 80's.
 
I think you could use a small hot plate inside the smoker for such low temps or use some light charcoal in the wood box. Of course the propane burner would not be on.
