Most, if not all, small thermoelectric (Peltier) coolers/fridges can't be successfully controlled, according to some folks who've tried it.

You can control the humidity with a saturated salt solution (~75% relative humidity.)

Yes like Martin said.

Even those small 8-12 bottle wine coolers are not that great, Get a fridge that has a compressor and does not have that waist of space ice box, or get a frigidair 2 door mini.
 
Ok here is the recipe I use for Tasso. It is based on the Len Poli recipe here  with a few changes I made...

5 lb lean pork

3 1/2 Tbsp salt

1 Tbsp granulated onion

2 Tbsp brown sugar

1 Tbsp fresh ground black pepper

1 Tbsp white pepper

1 1/2 Tbsp granulated garlic

2 1/2 tsp smoked paprika

1 Tbsp cayenne pepper

1 Tbsp crushed red pepper

1/2 tsp crushed habanero

1/4 tsp allspice

1/2 tsp thyme

1/2 tsp oregano

1 tsp cure #2

That's what works for me. If you've never made Tasso maybe give the Len Poli recipe a try & adjust it for yourself as not everyone's tastes are the same. This recipe works good for me though...
