With temps dropping into the bone-chilling 60s, it was obviously time to stock up on cold smoked lox!
Made ~5lbs.

Nice piece of work, have to strike while the iron's hot. I've done three loads so far this winter, have 15 pounds in the garage freezer. I might do another load or two just to be safe, there's a good 6-7 months where it just never gets cool enough. We've got a Einstein's Bagel Shop 400 yards from my house here in Gilbert, great way to start the day. RAY
 
I just picked up 2 salmon filet's & plan on doing lox the next cool morning.

A 20 minute walk and I'm back home with some warm fresh baked bagels and smoked salmon shmear, the lox is all thawed out. I could eat this every day, love it! RAY
