I cooked up some tacos de Lengua yesterday. Simmered the cow tongue with garlic, onion, bay leaves, peppercorns, adoba seasoning, and salt for 2 hours.

I removed the membrane after it cooled and seasoned with some Kinders all purpose bbq seasoning and smoked at 275 for another 2 hours.

Chopped that tongue up and put on some warmed tortillas with white onion, cilantro and hot salsa.

Nicely done! Congrats on making the Carousel! Don't see beef tongue on SMF very often.
I got the tongue when I purchased my 1/4 cow and wanted to try it. It will definitely be on my rotation from now on! Amazing flavor, almost brisket like.

I've had lengua tacos in Mexico. Very good, and it looks like yours is great as well.
 
I love lengua, in fact I had a killer lengua burrito from my favorite Mexican joint last night for dinner.

Los Portalas Taqueria, it in the same parking lot as Safeway, on the corner of Clayton Rd and Denkinger Rd. It's not anything fancy, its order at the register, and they bring it to your table.
Once a yr Concord runs "the best Mexican food in town contest", L.P. has won the #1 tacos in Concord the past 3 to 4 yrs, they don't skimp on the meat like a lot of places do since the meat prices have gotten so high.

We'll give it a try. We've been looking for another Mexican restaurant since El Charro closed in Lafayette. A lot of the restaurants serve the same old stuff, which is usually heavier than how El Charro served it food. Their margaritas were amazing. Rocks, salt, pint.

We've been going to La Tapatia in Martinez lately. A great carnitas torta. Everything else is pretty standard. La Aguila is another place we visit.
