So yesterday I was finally able to gather enough cucumbers from our garden to make up a batch of these. I've been making these for a few years now and my family loves them. They're easy to make and taste great.
Medium size cleaned cucumbers. Maybe 6 or 7 lbs. Sliced about 1/4"+ thick and into a plastic tub. Sprinkle 1/2 cup of pickling salt, mixing as you go so everything gets coated. Cover with ice and into the frig for 4 hours.

After the 4 hour chill, rinse off the salt and drain well.
I prepare my jars in boiling water for 15 minutes. Lids go in a seperate pan in hot water till I use them.
In a large pot, add 4 cups 5% white vinegar, 4 cups sugar, 2T mustard seed, 1.5T celery seed, 1T Picking spice, and 1t turmeric. Stir well and bring to a medium boil for ten minutes.

Then once that finishes boiling I add all the sliced cucumbers into this solution. Bring back to a boil and only boil for about one minute stiring as you go. You'll see the color of the slices go from bright green to a dark green. Stop! Remove from heat and spoon slices and juice into hot jars. Leave about 1/4" air space at top. Put the lid on a set aside to cool. Very simple delicious recipe.

You can also add some sliced onions to this recipe if you'd like. We like them without.
One of my favorite meals is slippery ham pot pie topped with bread and butter pickles a couple spoons full of the pickle juice, fresh diced onion and lots and lot of fresh cracked black pepper.

Gonna have to give these a try!
 
Rainy day and a few extra cuc's to play with so thought I would try Dave's B'n B' pickles. Had enough for about a half batch.

I put them under vacuum seal and will let chill completely. Can't wait to try them tomorrow, or (midnight fridge raid :emoji_wink:)
 
You might want to try using apple cider vinegar and brown sugar in place of the white and see if you like the more complex (savory sweet?) flavor profile. And make it two votes for some onion....and some Bell pepper.

My wife prefers white sugar and vinegar while I prefer apple cider vinegar and brown sugar. She wants just pickling cucumbers I want some onion and, in season, peppers. So we each make what we like. pick at each other until they are gone. And start over again next year........
