I started off the weekend loading the smoker with a small tenderloin I've been curing, a buckboard bacon that is ready for the smoke as well as a nice fat chuckie that I had in the cure for 2 nights just to see what it tastes like. I also loaded up the ECB with 4 pounds of Poodle legs.
Sliced up some Buckboard for breakfast with a few eggs and some Pumpernickle Toast
I did a couple of the ABTs with the cheese on the inside of the pepper, then I wrapped the pepper in sausage, then with bacon. They were killer. Kinda like a mini fatty.
I had a chunk of sausage left over so I rolled it up about the size of a quarter around and smoked it too. Sliced and on a cracker..... Shweeeeeet!
Lets not forget the 3 slabs of ribs.....
