Just thought I'd share my Q-View with you guys.

This is the first smoke since the mods on my Char-Griller Pro. I can't say enough about how much more even temps were after the tuning plates were added. It made a great difference in the performance. Also, the 3" River Country Temp gauges showed that the original Char-Griller gauge is about 75 degrees off!!

I used the 3-2-1 Method along with the Minion Method for the charcoal. Man, what a difference that made too.

I can't wait til the next smoke. I now have confidence that the results will be much more consistent.
 
The ribs look great. I learned about thermometers the hard way also - lesson learned? Get a good one, test calibration, and trust it. It makes all the difference.
 
Glad to hear of your results. I've been having trouble with temps in my CG lately. Tried a couple of things, one was removing my tuning plate. I left my baffle in place but removed the tuning plate. (Big cookie sheet with gradually larger holed drilled in it). I was apparently blocking off a lot of my heat. Another was making sure by baffle was not blocking the flow from my firebox to smoke chamber. And finally, I tried the Kingsford Competition briquettes. Much more heat with these briqs, and the ash was not as bad as the regular briqs.
