So as long as the mini WSM is still out I decided to smoke my Turkey Pastrami that has been I pops brine for ten days

My son wanted smoked cheese so at 40 degrees in nj .. what the hell. Two sharp cheddars , a Monterey Jack and an jalapeño cheddar with cherry pellets in my Tube
