Missed last Sunday's NFL action due to a picnic I attended(I did stay up the Saturday nigh smoking crab legs and (2) butts for the picnic).

So I have been looking forward to this Sunday all week.

I didnt get much of the pork butts at the picnic, so 5# butt is on the menu for Dinner Sunday, gonna put that on around 6:00 a.m. SUnday morning. I also am going to put a rack of spares & the tips I trim off of them on around 8:00 a.m. Tips should be a good snack, and the Spares should be good to go when the Ravens game comes on @ 3:00(glad I have NFL Sunday Ticket so I dont have to watch the Bears).

I ordered the pork from a local butcher again, and have really liked the pork he gets off his farm.

Sides will be slaw, maybe some beans, and a veg.

I got a 6 pack of New Glarus Spotted Cow when I was up in Wisconsin on Wednesday, and have been saving it for Sundays smoke. Gonna work on my rub, and use oak, and cherry wood.

Saturday will be some buttermilk brined chicken done in time to watch Jake Peavy's debut for the Pale Hose.

Whats on other folks menu for Sunday or Saturday?

I think it's going to be smoked Tri Tip, twice baked taters, grilled romaine lettuce salad, some fresh local sweet corn and a couple of cold Jack and Cokes. All cooked and ready to go for the Sunday night Cowboys/Giants game!

Your menu sounds good to me, makes the game even better. I like the buttermilk marinade, I got tired of the texture from a regular brine. Hope the game goes your way my friend.

thanks,

gonna buttermilk brine the wings tonight, and may smoke them on the weber kettle vs the GOSM.

just talked to the butcher, pork butt is a little over 5#, and he said the slab of spares was huge, weighing in at around 7#..... cant wait to get a look at these when I pick them up in a few hours.

Sounds like you have a good game plan with the butt and some huge ribs coming in at 7 lbs holy pig there batman. I'm wish I was with you because our jaguars are black out again and maybe the whole season according to the team. Oh well we still have th best team in college The GATORS. We will have a big time on saturday instead.

thanks, should be good, I'm messing around with a few new rubs this weekend as well.

those Gators are fixin' to put a whoopin' on the Vols this weekend I hear.

Just finished one of those Two-Weeks-In-One kinda workweeks, so I don't know yet.

But you better believe we will be watching the Redskins vs Rams game at noon local!
