Hello All -

Having some family over today for dinner. Gonna serve three racks of baby-backs, two beer-can chickens, and I'm going to try my first fatty. I came across some red oak logs that I've split into more manageable chunks. I've never heard anyone say how oak is, but I'm gonna give it a try.
I'll try to post some pics of the finished product.
 
Sounds like nice dinner, oak can burn hotter than some other woods and is great on beef. Try red oak when grilling, dy no mite!
 
I done my first fatty yesterday. Stuffed it with green peppers, onions and shredded cheese. Turned out great.
I am doing my first pork shoulder today, along with three racks of spareribs. Being new at smoking, I have only used the hickory chunks that you get at the home improvement stores. But from what I've read, oak should do a nice job.
 
Sounds like a great plan for a nice smoke today, h-lividum. Hope to see some pics of the products as they are sure to be mouth-watering.

I've got some oak chunks that have yet to be used but hear they are great on beef, especially when mixed with an apple or cherry wood.
