Looks amazing!  How long do you smoke a butt steak?  I've seen them in the meat case, just never cooked one.

Couple hours I guess took off at 145* I find them a Walmart you have to read the label they are much better that regular blade steaks. I rub them then bag them for two or three hours to let them sweat.
