Hello, I bought a Hi Mountai's home made summer sausage kit about a year ago. My question is are the casings cure and seasoning  still good after that long. also any other advise would be great.

P.S. the casings are mahogany casings.

the casings and cure will be fine, but the spices may have lost a little zip. is there a use by date on the package?
 
I agree with the above answers. I too use the Hi Mountain SS seasoning. First time I make it I follow their directions for seasoning amounts, but I use Cure #1 instead of their cure packet. The first SS just didn't have enough flavor so now I use it as a base and add other seasonings to it.
