I put some summer sausage in the smoker yesterday starting at 130 and raising temp every hour gradually until 170. After 8 hrs IT was 135, it was late so i went to bed and got up 4 hrs later and the timer had timed out and shut the smoker off. The IT had dropped to 110 so to be safe I turned it back on to 170 and am going to bring the IT back up to 150 before pulling it out to an ice bath.

The question is this....do you think the IT reached 150 before the MES turned off ??

I'm thinking it did or was darn close. I hope reheating doesnt mess it up....like I said it hadnt cooled off all the way yet so I feel im good with it... please respond with your wisdom...it shall be appreciated. Thanks....

I might add that I now assume thhat the smoker shut off because we lost power for a minute or so....I see all my clocks flashing in the house.

Thats a tough one. When you chamber is at 170 and the IT of the ss was at 135 it takes a while for it to climb to 150. If I had to guess I would say that it was between 140-145 when it shut off. But that is just a guess.

You'll be fine reheating the ss to make sure it reached 150.
