I am making some summer sausage and was wondering i usually just leave the summer sausage in the refrigerator over night and smoke the next morning. I have read a couple of posts where people have left there summer sausage in the refrigerator for 2 days. Is there any difference in the sausage after 2 days as opposed to overnight?

Not really, letting it sit at least 24 hrs lets the cure and lactic acid do their thing.I doubt two days would make any difference taste wise, but you would for sure have it cured thoroughly by then. I always let mine sit overnight to ferment.
