Just got my first smoker as a surprise gift on Father's Day. It's an off set OK Joes Bandera. No temp control or automatic feeder. Old school smoking I guess. Having trouble getting it to stay of get above 250 degrees. I normally smoke at 225 but when doing turkey or chicken I like the highe temp. Suggestions? And any other tips you may have. I have smoked everything and been successful. I have yet to try ribs or brisket. I have found that this site is amazing when looking for recipes and tips. I thought I would reach out to you all with my first post. Thank you all!!
 
Is the fire getting enough air? Also, open the exhaust all the way. Usually if fire is not hot enough, not enough air flow. If too hot, too much air flow.
 
Sounds like sauced has you covered.

But I would add, just start a bigger fire & put wood on it more often.
