We haven't had a stuffed pork loin for a while, so I decided to make one for our Christmas Dinner

Simple to do and "Oh Sooooo Tasty"!!!

I take a full pork loin and butterfly the meat

Fill with a bunch of goodies, and smoke

This makes a great meal, and fantastic sandwiches the next day

Whole pork loin sliced into (2) pieces and butterflied


Hot Italian Sausage

Fresh Spinach

Feta Cheese

Sun dried Tomatoes

Chopped Green Onions

Craisens(Dried Cranberries)

DipStix Steak Seasoning

Rosemary

Tyme

Fennel Seed

Caraway Seed                                                                      Fennel and Caraway Seed Roasting in aaPan

  

Layered with Sausage, Spinach and Spices                            Rolled and Tied


Wrapped with Bacon

Tube Smoker filled with Pitmaster's Choice Pellets                  TBS from the Stack


3 hours at 120° Internal....Now it's time to foil and finish to 145°

Todd ...Awesome looking dinner there!! I smoked a loin 2 weeks ago that i brined first for 12 hours and it was off the hook...stuffing it like yours would take it to the next level!!! Thanks for sharing...
