Stuff pork loin

Half of this went in Pops Brine for 14 days to make Canadian Bacon out of.

The other half is getting smoked today.


Cut that one in half . One will be stuffed and one will go on as is.


Getting Ready to slice it open


All ready for the filling.


Cheese


Onions


Black olives, mushroom, Jalapeno, Sweet Relish, Rub, BBQ sauce,


All rolled and tied up.



Some more rub on it.


Ready for the smoker,


Can't wait to get done. Got some pulled pork Chilli and baked potato on the smoker already 

Be back when its done.
 
Ed, morning..... Bride likes making that in the oven....  I guess I will have to ask her if it is OK to do in the smoker....

My wife keeps close eye on me when I'm in her kitchen.
I don't know why, just because I have borrowed a few things for the smoker,
Two pizza pans, cookie sheet, warming racks, I have even took the oven racks
From the oven to use in the smoker. :biggrin:
