Had a fantastic meal last night. Reverse seared beef strips with lobster tails, baked taters, and sausage stuffed mushrooms.
These strips had some decent marbling. Paid the price for that! Smoked to 120IT with hickory. Then seared on the smoky Joe using hickory chunks. Grilled the tails.
I should have taken a sliced cut. They were pink all through. And tender as heck! The tails were dipped in a butter, garlic, and parsley sauce.
