Have to visit my mom and sis. My mom lives with my sister. Sis and her husband are retired and all 3 are going to be moving to Dallas this year sometime. This will be last last trip to the safe haven state. (AKA) Snowflakeville.

These are set pretty good now so put all on one rod. Not going to worry about touching. IT is 144. Maybe another round of smoke.

I’ve become hooked on snack stix. When I buy a half steer every year, half the meat is in the form of ground beef. Snack stix are an awesome way of using it up. Looks like I have another recipe to try...
 
Talk to me about this PID controller. Are you using electric or propane?
I have a Sausage Maker 30lb Digital electric 1000w Had some issues with the element and the guys here got me going again and with a PID. Wired the element right into the power cord bypassing the OEM digital controller .

Google Auber Insturments. They make all kinds of PID.
 
These are the honey bbq hot sticks from the other day.
Since i'm driving solo on this trail I went with full length stix.
I added a bit of red pepper flake so i get the sweet not to hot taste.

Good looking stix, sounds like a good road trip. I should do some myself for ours. We can't get owens here, I have emailed them and never received anything back, so I will order some when we go stateside in march.....
 
Looking good N,,,, safe travels,,, quick question are you using any water?? or just mixing dry,,, If you are using water it looks like a very small amount Ay
