I used collagen casings and the ends got a little crunchy and the casings are a little on the tough side (see below). Will they soften up if I let them mellow in the fridge for a day or two?

The sausage tastes great though. Pretty happy with TSM Jalapeño Herb flavor profile.

I think I'd put them in a vac bag for a few days and they should equalize and soften/moisten up some. They look good to me, thats the way I like them!

That's what I ended up doing ...
Let us know if they soften up if you remember. I’m thinking about trying a batch for the first time soon so interested to see the tricks to cut the learning curve where I can
 
@BB-que shrink wrapped them and 2 days in the fridge…just about perfect. Collagen casing is still a bit on the tough side, but only minorly so.
