I probably should have explained the situation more. We will be at the beach, and there isn’t a grill. I have a little portable gas grill, but it will fit 4 steaks at a time at most. So I’m not cooking the whole time, I’d rather it be a large roast that can be cut into steaks after. If I had access to a full grill, I’d have 8 fat ribeyes and call it a day.

Since you'll be at the beach with only a portable gasser. I would marinate a nice flank steak overnight. Then cook on high heat.

I decided to ask - everyone wants prime rib! Go figure. Easy enough, I’ve done that with the sous vide before.

Good luck. If you have never eaten a tri-tip, salt (medium), pepper and garlic, you and the family are missing out on some excellent vittles. as stated pull at 130 degrees. cut cross grain.

Definitely on the list to try out.

I ended up cooking it last night instead of tonight. I would have preferred bone-in, but the moms wanted boneless. It was overpriced IMO, but tasted incredible. Unfortunately I’m now required to make this for all vacations.

Wow you paid a steep price for that but it sure looks like it turned out great! That’s all that matters! Can’t take that extra cash with you when you go but you can leave with a full belly!
