Picked up a rack last night at Wally World and did them on the RT today, for myself and the Mrs.

Out of the package and trimmed up.

Tried something new mixed up some mayo and yellow mustard for a binder.

Slathered it on.

Then sprinkled on a healthy dose of rub.

Let it rest for about an hour then on to the RT-340
Ribs went on at noon 225°
Bumped it up at 2pm to 235°
At 3:45 Wrapped in butcher paper with squeeze Parkay and a dusting of maple sugar, upped the temp to 250°
At 5:55 Un wrapped at drop the temp back to 225°
Sorry no pics during the cook.
At 6:20 pulled the ribs.

Served up supper ribs and acorn squash. This is the first time I've used a binder, the ribs were some of the juiciest I think I've made.

Eric, that's a mighty fine looking rack of ribs and the acorn squash is an excellent side! You did good...
 
Awesome job on those ribs! Probably my favorite thing to smoke!
