I am still learning and perfecting my BBQ skills. So far I have successfully fixed several different kinds of ribs with St Louis Ribs being my favorite. I am using my MES 30 with the cold smoker attachment and using the 3-2-1 method. But what I want to know is what wood/pellets are you using with ribs? I have Mesquite, Hickory, Cherry and Apple pellets on hand. So far I have used just Mesquite but I'm just looking to experiment a little. Tomorrow a crew from the Minot Fire Dept are coming over to finish shingling my house and I thought I fix ribs for lunch and don't want to disappoint them.

Any suggestions would be greatly appreciated.
 
Almost everything I smoke is done with a 3:1 mix of pecan to hickory. Sometimes I throw some apple chips in.
