 Getting ready to attempt my first batch of summer sausage. Will be making about 10 lbs.

would I use about 6 lbs. of beef and 4 lbs. of pork. Any thoughts would be helpful thanks in advance
 
Never made it either, Craig (fpnmf)  is a master.

 Havent purchased the beef yet was thinking about maybe 15-20 % fat.
 
I like to use 2/3's pork butt and 1/3 chuck. If 80/20 burger is on sale I'll use that.
 
Yup what Dan said.

If i was going to use 80/20 GB i would go with 7.5 lbs and 2.5 pork.............But thats how i do it
