Going to make SS for christmas gifts, making them today , should I store them in the fridge or freezer for best keep until then ?
 
if you have a vacuum sealer just  seal them up and keep them in the fridge

cured and smoked SS will keep quite well for several weeks.

if you dont have a vacuum sealer  be sure to wrap of put in ziploc bags as the fibrous casing will let the Summer sausage dry out if  you dont wrap them
 
Roll them in a single layer of clear film then in a wrap of aluminum foil and freeze them if you can't vacuum seal them.  They keep well that way and when the thaw out they are in real good shape.
