Splatchocked Turkey breast

Got this guy on sale around thanksgiving and we actually had a decent winter...so just getting around to it. Did the slaughterhouse brine overnight, rub butter under the skin and oil and rub on the outside. (the wire pokers are pulling the skin down - they trimmed the skin a touch higher than I like)

this turned out so freakin good! did a batch of grilled artichokes with it.
