Spatchcock chicken with garlic, butter, mirepoix fresh rosemary and seasoning, the sausage should baste it nicely

We love our Chicken-n-Sausage too.
I know the sausage added to the bird, I do that all the time too.

First time I recall seeing Mirepoix aka Soffrito used in that manner on a spatchcocked bird.
Usually see it used as a bed of aromatic veggies/herbs in the oven.
And it stuck well to the bird when you flipped it, nice.

POINT for the creative usage of a culinary flavor staple.
