From my limited experience, it's easier to maneuver the bird as "whole" rather than cut. Spatchcocked, it's like trying to get a toddler into a car seat... but that's one man's opinion (arms and legs in all directions at once!). 🤪

Thanks everyone. I have 2 brining containers and have 4 turkeys. I read to spatchcock after brining, but didn't know a reason why other than ease of handling. Thanks again and Happy Thanksgiving
