I've yet to try ribs hot & fast like that.

Dry rub ribs are a nice change of pace. Last batch of dry rub ribs I did turned out really well.

I did go with only the dry rub but spritzed with apple juice and apple cider vinegar every 20-30 min after the first 2 hrs or so.
I think it really helped with the juicy factor because those ribs were so moist. Also used a water pan next to the firebox.
I have a pretty large smoker so not sure if water pan helped too much but they sure came out nice. If I could replicate those ribs every day I could sell them for sure.
