Happy Memorial Day. Getting ready to fire up the smoker. 2 slabs of ribs rubbed and coated with brown sugar chillin in the fridge. Made some mods to the rub from last time.

Last time had problem maintaining temps. Going to build fire on grates in SFB. Will build a fire box in the near future. Also going to flip charcoal grate in smoker body for a cheap tuning plate and use water pan as a baffle by the exhaust. No other mods. Want to see if I have any better results this time. Suggestions?
 

2 hrs in. Will foil in another hour. Very happy with the changes I made. Keeping constant between 220 and 225. Used 3 chimneys

Ok. Did a quick check and rotated in the pan. 1 more hour to go in foil. Temps holding steady and intake vent almost fully shut. Very happy on how this is going. Thanks to all of your help.
 
Thanks. This site has been a real help. Last hour or so. Did 1/2 dry and 1/2 wet. Just sweet baby rays cut with apple juice. Keep fingers crossed I don't screw up the finish lol.
