Spam Candy on the MES 40

I made these last weekend, been thinking about them all week.
AKA Spam burnt ends, here's how I make mine.

Cube up a can of Spam and dredge it in your favorite rub.

Heavy smoke for 2 hours at 250 degrees. Have water in the pan for moisture.

After 2 hours glaze the cubes. I use Sweet Baby Rays, maple syrup, butter and a splash of bourbon.

Cook for another 30-40 minutes, until glaze sets.

I like enjoy spam occasionally and I am sure those are tasty. Heck in Hawaii they’d go crazy for those!

I have never liked Spam, but I’d give one of those a try!

Wife loves SPAM, but rarely eats it due to her sodium restricted diet.
I bought a used Big Chief that was just as clean. Not so today.


I'm with Fueling's Wife---I love Spam, but only eat it once in a while, because of the Sodium content.
