Sous Vide Tri-Tip

First attempt of sous vide tri-tip this weekend.
Put it in the bath at 133 for 6 hours.
Pulled it and started the grill, got it as hot as it would go and seared all sides.
Came out great, super tender.
I've tried cooking it 3 ways now and each has their own flavor and tenderness. I've tried smoking like a briskit, over open fire and now sous vide.
Tried baked potatoes rubed in oil salt and pepper in the airfryer, they were easy, not sure what I did but they weren't as crispy as I would like, When I pulled from the airfryer they were crispy, after they sat for about 5 minutes the crispy went away and the skin was a little tuff

Nice job. The tri-tip came out perfect. The potatoes came out looking good, and I'd bet they had good flavor, even without the crunch texture.
 
Mouth is watering. What spice/rub do you use? Tri-tip is an infrequent visitor here but on occasion it does make a visit but at $16/lb vs $10 for prime rib....

popularity kills it for me.

Yeah same here, We have one store that will have them sometimes, went by a store that had an actual butcher, found this one for $7.99 a lb

Used SPOG on the TT and salt and pepper on the potatos
