Sous vide summer sausage

hey guys. I’m completely new to the sous vide thing. Don’t own one but looking. Has anyone/is there a way to do like 25 lbs at a time with one of these things? Like maybe stick them in a big ice chest and let it do it’s thing? Obviously it would have to be a powerful one but every thing I see, they’re doing like 5 lbs at a time, if that. Thanks!
 
I've done 8 lbs of bologna in a coleman cooler with my 800 watt . Had plenty of room left over to add more chubs .
This is a pic of the cooler so you can see the size . That was a batch of hot dogs I did .

I sous vide stuff, but it's normally to reheat... do you just toss the sausage straight in, or do you put in ziplocks or some thing first?
 
The hot dog casings are water proof , and I have high barrier 80 mm for larger sausage that go right in the water . Non water proof need to go in a bag . This is a high barrier casing .

That’s what I’m looking for! Maybe not do all 25 lbs of it at once but maybe 10 lbs at a time. Do you ever shut the lid or leave it open at all times?
 
I still use that cooler ,,, as a cooler . So I haven't cut the lid . I have a piece of 2 inch rigid foam cut to fit the opening .

I can fit about 20lbs in this cooler. The cup holder recess is exactly the right size for my anova sous vide

So when you throw them in the water, do you just simply toss them in there? Is it ok to let them lay on top of each other? I received mine in the mail earlier this week and I’m gonna test it out today.

If they are not water proof casings , you need to bag them up .
 
I put the s.s. logs into a ziplock freezer bag then into water bath. Works good for me. Did 20lbs last night. 150deg for 3hrs after a 5 hour smoke at 120-130

Looks great! I did mine last night also. 3 hours on the smoker at 130° and 3 hours in the bath at 153°! Came out perfect. Thanks guys!
 
I do them quite often. What I do is get one of the chest coolers that Mr Crab has. I usually can fit 4 chubs in a 12" wide sousvide bag and I can fit 4- 5 bags in the cooler. I don't vac seal the bags, in fact cut it extra long so I have the excess hanging outside the cooler. Then when it is done I rinse the bags, fold them & store it in the freezer. When I need to make more sausage I reuse the bags. I used the bags about 8-10 times & they still hold strong. Hope that helps

I never thought to put multiples in the same bag. I’m Just so used to doing them in the smoker and keeping them spaced out so they all get smoke, I never thought of it. That would definitely save a lot of space.
