My wife does a great job of saving $$ on our grocery bill. We call it cheap meats!
Got this PR right at Christmas , vac packed it and froze. 4.4 pound perfect size for 4 of us. My wife's brother and SIL camp beside us for a good portion of the winter. How should I cook this? Looking for some input.

I was thinking poke a few holes with a knife and rub it with hardwood roasted garlic. I always make some sort of roasted garlic, it so easy and keeps for months in the reefer.
Into a bag with onion soup mix and some cracked peppercorns. Set temp at 120F and give it a bath for 15 hours.
I'm a little limited on searing options since I'm camping. I could set it up indirect high heat and roast it in my PK Go until 128F. Or I could slice it and sear off individual steaks. We all like our temps at rare side of medium.

Let me know your thoughts. Cooking for Sunday dinner tomorrow.

Brian will have to try some hardcore. I have activated charcoal finish salt at home. Great to finish a steak.

Just a quick post from the phone. I started the SV at 10pm last night. So it's been soaking about 10.5 hours. Here's a picture while warming up.

17.5 hours in the water bath. Mom needs the pot for cooking home made pierogies. We have one nice stock pot iin our trailer.

Clean the grill up. I have been using this guy a lot.

Scorching hot fire in chimney. Royal Oak large hardwood briquettes and some RO lump. Chunks of hickory.

Decided to roast a strawberry onion. Fire toast. cut an X on top, Then into foil bit dollop of butter. Topped with a little Montreal seasoning. All side Sear on the PR.

Move roast off the fire & close the lid to smoke and dry and roast.

I will have to say the roasted strawberry onion turned out phenomenal. I am going to buy a few more of those and take then to friends in Arizona.

Natural sweetness and silky. Not pictured ceasar salad and fresh baguette.
Lemon Bundt cake for dessert.

Wow did that turn out good RG! Nice call on the onions. I got to start doing those again. Looks like a great meal with friends.
