Source for beef trimmings and pork fat?

I've purchased a grinder for processing venison ... and now I'm wondering where to get beef trimmings and pork fat. I live in a medium sized city (Baton Rouge, La) and there aren't any traditional butcher shops anymore. Any suggestions on where to look?
 
Processor facilities that are USDA inspected and process local meats for individuals, their own animals. There may not be many butcher shops but there has to be processors of whole animals for people who raise their own animals or people who buy animals to process live on the hoof.
 
I get mine from the supermarket butchers. I just ask them to save me some a day or two before I need them. They used to be free but "Corporate" now makes them charge a small amount.

BrB, Just buy a pork butt and mix that in the grind for some great venny hamburger. 4 pounds venny to one pound pork butt is a good ratio, I sometimes go a bit higher and still never have to drain off any grease from the pan.
 
Go to your local grocery stores meat markets. Sometimes they can sell it to you. If not there are several places online that you can buy it from and have it shipped.

My brother wanted pork trimmings and paid more $ than butts on sale. Watch what they are charging.

Last grocery store butcher I asked told me they were no longer allowed to sell fat trimmings. I dont know if that is a corporate thing, a state regulatory thing or more "health activism".

The FDA, CDC and ADA are still telling doctors that animal fat is bad for you and the doctors preach it. I disagree, but they have to regurgitate what they are told to regurgitate.

I suspected as much. Animal fats are necessary for good health--I'm pretty sure they know THAT.

My local Safeway often has pork fat trimmings for a small price. But for some reason, none of the other stores near me do.

I always score at one of the local grocers. Don't be shy. Go talk to the butcher in the grocery store and let them know you are looking for a steady supply of fat for your sausage making. One grocer here only trims fat twice a week, and saves it for me if I ask. They have to sell it, but it costs a buck a pound. Another butcher gave me fat for free if I dropped off a few links -- sadly that store closed during the Covid scare.
