So I asked the Boss today what she wanted for dinner tonight. She say grilled cheese and soup. That would be easy if she ate Tomato Soup, but she does not. So I got thinking while waiting at Doctor office. She likes French Dip and French Onion Soup. But I could not just leave them alone, I had to do a little something different. So I made a French Onion Grilled Cheese Sandwich and French Dip Soup.
I slowly caramelized the onion down to a nice dark brown. (Butter, onion, garlic, thyme, bay leaf and S&P) It took about 40 min on low heat. Removed most of the onion and set aside for sandwich. I then added some red wine and reduced by about 70%. Once the wine was reduced, I added the beef stock and seasoned with garlic, a touch of beef base and S&P. I poured the hot broth over the roast beef strips just before service. The grilled cheese was made on a soft french loaf with Muenster cheese and provolone (I know not Swiss cheese or Gruyere, boss does not like those). I layered the cheese on both sides and put the onions in the middle and grilled them in a pan with some butter.
