done these before its a cant miss. trimmed a shoulder and chunked it up. dry brined it almost 2 days. took it out and rinsed it off. set back in fridge to get grill hot. dumped the bowel on the hot grill and scattered it out.
grilled to get nice char on it. after that i tossed it all in the instant pot for a 15 min squeeze. took it out and poured some orange glaze on it for the wife.
just served with a pile of peas. super tender and flavorful end result. id say the cook only took an hour in all. so, with some foresight a fast tasty BBQ dish for any week night. we both have lunch left over and then some.
smoking instead of grilling would definitely kick this up a notch
