Well, after finding and scouring this site, and the subsequent drooling thereafter, I had to do some shopping!  Guess what showed up on the UPS truck today!

@Spoolinaz, I followed the advice from here, and tossed the stock chip & water pan (you all are right, they are a joke).  After last nights initial burn, then a tray of Mac & Cheese, I found the stock thermometer to be 50 degrees off from my grate thermometer that I know is correct from my oven.  So, stock thermometer = junk.  Would like to follow some advice and build a smokestack with damper for the top of the cabinet ( good thing I own a machine shop :))  Last would be to seal the door.  It didn't leak bad, but I could see the door warping over time.  All in all though I was pretty happy.  $205 from Amazon with free shipping (I'm a prime member) 

SO!  Anyone recommend a good door thermometer?  Or how to mount a digital probe somewhere?
