If it was a freezer or refrigerator, you will need to replace the insulation.
 
It was a refrigerator. I wonder if I insulated the inside by lining it with cedar 1x boards if I would still need to remove it.

From what I have read removing it is a tough and time consuming task.

is the issue it melting?
 
1" boards might help. Never heard of anyone doing that.
Yes, the issue is the insulation could melt or otherwise break down.
