my turkey stays at 140. iam doing a 14 lbs turkey and i read about the danger zone do i turn the heat up or what thanks for your input
 
Why would it stay at 140? Cook temp too low?

I would not worry about it on the way up. I worry more about the danger zone on the way down........in the cool off period. Of course you don't want to keep it in that zone forever, but if you are planning on cooking it to a higher temp (which I assume) I wouldn't worry about it much.
 
ok i was going to smoke it at 300to 325 i did a 13 pounder the other weekend it turned out great it only took about 4 hrs thanks for your advise
