Howdy!!!

Just wanted to say THANKS to everyone who commented on my post a couple days ago when I needed a plan to rescue what I thought was a brisket cook going really really slow. Turns out the thermometer or probe or both were malfunctioning and throwing off wrong temps. Anyway, I was able to finish everything and had a great gathering with friends on Saturday, after the rain cleared out. Here are some of the finish pictures, along with some of the build pics of the smoker (a couple have asked for more pics...):

Thanks again for all the help!! So, the smoker is something I made. Vertical offset, 1/4 inch steel fire box

Got enough grates to hold a nice amount of smoky goodness. I did include some baffles to control the heat distribution

No welds at all, all drilled and bolted together. Smokers always look pretty when new

Thanks for looking!

Good looking Brisket..but I have to say I love the smoker more! The dog cut outs seal the deal there!

Thanks. Hence the name, HowlingDog.... Plus a couple of the German Shepherds I have had were great at howling...

The cutouts were store bought. As soon as I saw them, I knew they were going to be the handles on the doors.

Very nice build indeed! I own a Shep too, she's great. An utter wimp..but well :)

Good looking brisket and build for sure. Almost ready to jump in and build one. Really love the finished look and vertical offset design!

Thanks everyone. The build took almost a year. I am not all that handy. If you promise not to laugh, here is the cardboard model I started with:

Moving boxes and duct tape!! Who knew it would turn out!!

Shepherds are "special" I am sure we could talk for hours about their idiosyncrasies!!

Hey the Model looks alot better then most of the things I envision. Since I never do models..do like duct tape..

And boy could we LOL!

Well the brisket looks fantastic!!
But that smoker is something else!
Very nice work!!

Brisket looks good! I see you are a fan of Head Country!! I didn’t know they made so many varieties.
Great job on that smoker! No welds!! That’s cool. Is it pretty air tight? And how does it do keeping temperatures steady? I assuming that insulation helps a bunch.

Food looks great. It's obvious you have talent making a smoker. Looks nice. You will be the envy of the neighborhood!!

Thanks for the nice comments everyone!! It means alot coming from you masters....

It takes a bit to get up to temp and will stay in a 30 degree range for about 20 minutes before I have to add fuel. I use charcoal for heat and mainly hickory, with apple, peach for flavor. I have hi temp seal on the doors and hi temp RTV on the firebox door. It does pretty ok, but it does need tending, which I like to do and is part of the fun of the smoke!! I also have a WSM for long or overnight cooks.
