Hey All!
While preparing ( Saturday) for last weekends storm my Wife suggested we do gumbo on Sunday - fine by me - trip to grocery store? Well, at least no one got hurt… I grabbed a big pack of chicken thighs and some andouille. No shrimp the wife is allergic. Smoked up the thighs with cajun seasoning Saturday late afternoon, let cool a bit, then pulled the meat and into the fridge for Sunday - yes, of course I had some samples 😉

Started Sunday watching the Hockey game then took a nap and started cooking. First make the roux. I’ve only done it a few times before but it turned out pretty well. I know it could go a couple shades darker but we were getting hungry!

Got 2/3 of the trinity mixed in with some seasoning then added the andouille. Cooked till soft then generous garlic addition about 45seconds. Added stock and the rest of the trinity, bay leaf and thyme. Finally reduced to a simmer and added the chicken then just let it reduce down.

Turned out great! Of course we needed a cocktail for desert (ok wasn’t just dessert and there was more than one). Anyone care to guess? Hint: it’s a (broadly) regional fit to the gumbo.

Vieux Carré for $400 Alex.....

Looks like a fine gumbo to me. The cold weather makes it even better! Smoked chicken is how I like my chicken gumbo nowadays.. Congrats on making the Carousel.
Thanks for the spin! It turned out quite well. I think I recall you like file’ in yours but with the short planning time I wasn’t able to buy any. Still tasty 😋

Vieux Carre it is. I never made one before but had everything but the Benedictine which we picked up on the liquor run after the grocery store. Pretty good 😉

Thanks, quite tasty, Lol, I thought he would too 😉 I’d consider the Vieux Carre a cousin of the sazarac: same base (different proportions ) then absinthe vs benetictine for the herbal and sinple syrup vs sweet vermouth for the sweet component. Same bitters.

A really nice looking bowl of gumbo. And cornbread on top of that. Great looking meal. And I must say that's a nice patio shot, although much more comfortable on the inside looking out.
 
NICE and congrats on the ride! Well deserved.

Not sure what stock you used but I once made stock from the scrap of a cured smoked turkey for a gumbo and no other way. Kicked it up another level. Essentially free too. Throw in IP for an hour or so.

We were just looking at some photos my wife's cousin sent from the snow in Mass. They had over 2 feet in one storm on top of what they already had. Little walking areas carved out of the snow piled 5 or 6 feet high around the paths!

That's why I live in the south. 2 snowflakes and everything shuts down, as it should!

Thanks! We just used chicken stock from the store. For some reason we never get around to making our own even when we have the bits to do it. I’m sure some quality homemade would bump it up 👍
