I am wanting to get started on snack sticks. I have recently bought a HI-Mountain snack stick kit that comes with casings and seasoning. Looking for any suggestions on gum to fill casings with and tips on smoking and storage. Thanks in advance for any tips!
 
Do you have a grinder ?
Do you have a stuffer ?
Do you have a smoker that will go as low as 120 degrees ?
Can they be hung from a rod in the smoker ?
I'm assuming the kit came with cure #1 in it ?
 
Need a stuffing device. Don’t try this from a grinder. Grind, mix then stuff the casings with a stuffer. At bare minimum use a jerky gun, but don’t try this from the grinder.
 
Yeah as others have said. But at bare minimum buy the LEM Jerky Gun, it's great for making small batches of snack sticks.
